I really though suggest, aiming towards the female market. We're far more apt to shell out money for high priced smoothies. (i hate to be stereotyping but ..)
I'm sure you're already hunted on stats for your area, ect, and have a specific demographic in mind.
I would be very interested in details of your business plan - you plan on having a HUGE facility. I would be curious on how you even plan on covering basic costs on that level ... not to mention, the amount of product you'd need to just fill that space ...
In NC, does your store need to get a food handling license? or anything of a legal by standing to ensure proper insurance coverage? What sort of business insurance will you need?
I know I've seen more than a handful of these places fold here in Toronto within a few months ... so I'd really be interested in how things work out for you in NC.
