Come on folks, help me out here. I am on a cut and I need some healthy, low calorie, dessert recipes that are great for body builders!

I am trying to stop eating M&Ms and Snickers. Both these items are not very conducive to a cut!
 
Looking for something sweet? I like to take cottage cheese and put it in a food processor with a little cocoa powder and a touch of honey or stevia. Comes out with a pudding consistency and taste a little like chocolate cheesecake. Also here's a link to recipe my wife uses for a peanut butter casein brownie. It's actually really good and fast to make.

The perfect dessert for me is a high protein cheesecake. The cake is made with eggs, light cream cheese and protein rich fat-free yogurt to confirm to provide completely bodybuilding nutritious. Yummy taste.

Today I present you Coconut cookies! :D :headbang:



Coconut Cookies

These cookies are guaranteed to satisfy your sweet tooth. They combine the taste of coconut and almonds and contain 170 calories per cookie. You will also get five grams of protein, 10 grams of carbs and 13 grams of fat per serving.

Ingredients:

1/4 cup of melted coconut butter
1 cup of almond butter
1 cup of shredded coconut unsweetened
1/2 cup of almond flour
1 teaspoon of baking powder
1 teaspoon of vanilla
1 egg
1/4 cup of honey

Directions:

Before mixing any of the ingredients together, you should preheat your oven to 350 degrees Fahrenheit. While the oven is heating, combine the almond flour, shredded coconut and baking powder. To this mixture add the coconut butter, almond butter, vanilla, egg, and honey. Mix these ingredients together well. After the ingredients are mixed, use a spoon or your hand to form two inch balls of the cookie mixture. Place these balls on a baking sheet and slightly flatten them out. The cook time for these delicious cookies ranges from 12 to 15 minutes. You will know that they are finished when the edges are golden brown. Let the cookies cool for about 10 minutes and dig in.

My girl just made some dessert and I was actually surprised on how good it turned out. Peel and freeze some banana's in a baggie, thaw them out slightly, put them in a food processor with almond butter and some cut up dates until smooth. Then just pour it in a bowl, it's almost like a pudding/ice cream. You can also add some Splenda or something if you're feeling it!

I’ll share a couple that are easy and even I can do (I’m a beginner- intermediate level cook)-

Egg White French Toast Cloud:
300 ml egg whites
2 tsp vanilla extract
1 tsp cocoa powder (optional)
1/2 tsp salt
2-3 tsp cinnamon powder
5 TBsp Splenda / to taste ( or preferred no calorie sweetener- stevia and or monk fruit liquid works well also)

Mix everything in a large bowl, using whisk beat until stiff peaks form (I use an electric one cause it takes a few minutes), then pour everything into either a non stick sprayed baking pan or line one with parchment paper and then spray the paper with non stick spray.

Air fry for 14-18 minutes at 355-360 (air fryers vary).

You’ll get a massive, fluffy airy soufflé pancake, transfer to bowl , it’ll deflate some. Add toppings, etc.

Things to remember, air fry slowly and relatively low temp so the texture is smoother and more flan like rather than eggy. But play with it.
Macros: mostly the egg whites!
 
Dessert Cream of Rice-
Super easy, the trick here is understanding just how much cream of rice absorbs water- but this one is stupid easy, just takes a bit of time. It’s high volume too!

Start with 70-80 g of plain COR, in large microwave safe bowl, add in 350 ml water, sugar free Splenda, stevia to taste (I usually add 5 tbsp), mix as best you can, microwave 2 minutes.

Rest it bowl, wait 2-3 minutes, then add another 100 ml of water, rest it the whole thing.

Microwave another 90 secs or so- keep an eye on the bowl and be ready to stop the microwave if it boils over so it doesn’t overflow!

Take out again and now you have 2 options after you restore- check consistency once it cools off for 4-5 minutes (COR will absorb more water)-
1) Add 100-150 ml egg whites and stir in or
2) Add 1 tbsp sugar free jello cheesecake powder

Mix it all in thoroughly. Check and see if it’s a bit watery- if not add a bit of water (50 ml or so)

Microwave again for 60-90 seconds, then take out, restir and wait 5 minutes or so.
Should have an almost custard like consistency.

Add toppings/ sugar free sweetener to taste and enjoy!
