My girlfriend introduced this recipe to me.. at first I didnt think it was going to be anything special but damn.. this is damn good fish!
What you'll need:
Parchment Paper
Carrots
Pesto
Olive Oil
1. Cut the parchment one sheet per slab of fish.. make sure its large enough so you can tightly wrap and fold in the 4 edges around the fish when done..
2. Put a couple drops of olive oil down on the parchment, spread around and lay the fish on the oil..
3. Take your pesto and smear it all over the top of the fish.
4. Shred with a peeler a liberal amount of carrots.. I usually do 2-3 carrots per piece of fish depending on the size of either.. Once you have all your carrots shredded.. put a good handful evenly on top of the fish..
5. Fold and enclose the fish in the parchment paper.. make sure no liquid can leak out when in the oven..
6. Bake at 425 for 20 mins..
7. Enjoy..sounds simple and nothing special..you will be very pleasantly surprised..
