I love making fish tacos. 2 lbs tilapia in a pan on med-high heat and chop it up with your spatula to the consistency you want. Throw in 1 can of El Pato sauce, add some Pappy's seasoning (I am not sure if that's just a regional thing or if it's available nationwide. Regular 'taco seasoning' would be OK too). When it's almost fully cooked, throw in some chopped up cilantro and green onions, along with some dried oregano and garlic. You can add some extra salt if you need it.
It's so damn good. I'd make some today if I wasn't working on some leftover barbecued tri-tip.
