Making your own saled dressing

I just pour some olive oil on, then some red wine vinegar.
 
Mix the best extra virgin, cold pressed,olive oil you can find/afford, with an acidic component. I usually choose a balsamic vinegar. There are huge differences in flavor so find one you like. Lemon juice can be used as well. The acid component seems to "brighten" the flavor. Sometimes I will mix in some chopped shallot or fresh herbs.

To balance the acid component (vinegar and/or lemon juice) I will use a no calorie sweetner such as Splenda.

My Salad dressing recipe:

In a food processer
2 cloves garlic
1 handful fresh parsley
1/2 red onion
1/2 cup Vinegar
1 TBS Splenda
Salt
Pepper
Process on the lowest speed and slowly drizzle in 1/4 cup EVOO

To really maximize the taste cover and chill in your refridgerator for a couple of hours.

Mix oil:vinegar at a 3:1 ratio.

So for one serving, I usually use 1Tbsp of oil and 1Tsp of vinegar.

Perfect every time.
 
Awesome, I will try some of the these ideas. I love cutting up a 5oz chicken in some saled. I always used pre made, not so healthy dressing.

I also put Dijon Mustard in the Balsamic vinegar and whisk it up and then whisk in the Olive oil. It will stop the split/separation oil and vinegar :)
