Pumpkins are in season and why not consume them instead of sticking them on your doorstep or by a window. Look for the sugar variety (2 to 5 lbs).. Pumpkins are loaded with all sorts of antioxidants and beta-carotene and they have around 12g of carbs per 1 cup serving.. Try roasting one up by cutting in half, season how you like (salt, pepper, cinnamon, butter, etc.), and baking at 400F for about 35 to 40 minutes, until its nice and soft.. Don't forget to scoop out the guts and seeds.. Very tasty!
