Air fryer is best, but I'm usually way too lazy even for that, so for sweet taters, I wash them, poke lots of holes, wrap in a damp paper towel and nuke for 5-8 minutes.
I’ve been cutting in half those little creamer potatoes and anytime I’m smoking chicken or whatever they just go in the smoker as well. Olive oil, salt&pepper, and rosemary.
Throw a few bags into the instapot and voila. Then I sear them on the stove with some grass fed butter and ranch seasoning during dinner time. Perfection!!
40 min @ 425. Make a compound installed butter with some Tony chachere salt free Cajun seasoning. Two table spoons butter, table spoon seasoning, melt in microwave. 30 sec in microwave safe dish (cover with paper towel). Slice potato, coat with butter, back in oven for 5 min. Sprinkle with chives or green onion when done. I don’t add salt but you can add some if you like.
Microwave, then cut the potatoes, add bacon, beaten eggs, and cheese inside, and bake for a couple more minutes until done. It's easy, quick, and delicious. But I still like it better baked with meat and cheese.
