Homemade fermented kimchi. I make a gallon at a time and I make sure that I never run out

Yea, this sauce recipe was awesome and on point! The bottled Bob Gibson I thought was gross though I hear the bottled sauce is better tasting as a basting/marinating mix on chicken/poultry though. That said, i'm a Cali boy....so could just be that i'm not used to it, lol. The white sauce recipe, actually the whole chicken and sandwich recipe, I got from Malcom Reed I'll be making this all again soon. This recipe is good too....It’s the exact one from a bbq book I have. I’m just not the biggest horseradish fanClose to Heavy's....here's the one I used:
2 cups Mayo
1/2 cup apple cider vinegar
1T course black pepper
1 heaping teaspoon of prepared horseradish. Probably 2t.
1t kosher salt
1/2t cayene pepper
Juice from 2 limes
Not the healthiest, but damn good! Put all mine in the mason jar seen in the pics and just shook it together and let rest in the fridge for a few hours to meld together.
