I eat a lot of roo burgers these days. (very) Lean red meat. And its pretty tender when minced.

Shot them for my dog's as a kid...seen them stand over 6'

And it's very lean meat, slow cook would work. However like I said, dog food or send ot to the USA as premium meat

Remember as a kid growing up that they said McD's burgers were made of roo meat. I was at a better quality pet store last week and saw a bag of premium dog food made with kangaroo beets and yams. $87.99 for a 31 lb bag

No - more like Bison/deer. A little like lean beef. Very gamey and lean.
